Jon Taffer relaunched Blue Water as Sydney an Australian Beach Club.

Sydney, an Australian Beach Club, closed in January 2019 after its lease expired and the building was sold. A poor health inspection in October 2018 had found dead birds and mice on the premises.

What happened next

Sydney, an Australian Beach Club, started strongly, doubling its sales at the six-week check-in. Chung continued to visit the bar regularly and Charlie stayed on as manager. The bar's position deteriorated later in 2018: an October 2018 health inspection produced very poor results, with inspectors finding dead birds and mice on the premises. Sydney closed in January 2019. Chung attributed the closure to the lease expiring and the landlord selling the building; the new owner demolished the building and redeveloped the site as condominiums. Reviews at the time of the closure were poor, at 2.5 stars on Yelp.
